Chewy Low Calorie Protein Cookies packed with flavour, low carb, gluten-free and perfect for a weight loss snack.
Ingredients
1 cup (250 g) cottage cheese
1 egg
½ tsp vanilla extract
⅓ cup monk fruit sweetener or erythritol
¾ cup almond flour
1 scoop vanilla protein powder
Pinch of sea salt
4 tbsp dark chocolate chips
Instructions
- Preheat the oven to 180°C and line a baking tray with baking paper.
- In a blender or food processor, combine cottage cheese with egg and vanilla extract. Blend until smooth and creamy.
- Transfer blended cottage cheese to a mixing bowl, then add granular sweetener, almond flour, protein powder and a pinch of salt.
- Stir until the dry ingredients are mixed into dough well and reaches a smooth consistency.
You might need to adjust the consistency of the mixture with a table spoon of almond milk if too thick, or with more almond flour if too sticky. Adjust to your own preference. - Fold through chocolate chips.
- Transfer your cookie dough onto baking paper and make into 8 cookies spacing them apart.
- Place cookies in oven for 10 to 12 minutes.
- Let cottage cheese cookies cool over a wire rack before serving.
Makes 8 cookies and only 120 calories per cookie
