Coffee cake
Ingredients
- 3 large eggs
- ¼ cup plain Greek yoghurt
- ¼ cup pure maple syrup or sugar free to lower the calories
- ¼ cup monk fruit or erythritol
- ¼ cup melted coconut oil
- 1 ½ tsp vanilla extract
- 2 ¼ cups almond flour
- 1 tsp ground cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground coffee mixed with 3 tablespoons water
Instructions
- Preheat the oven to 180 Celsius and grease a square baking tin. Line it with parchment paper.
- In a large mixing bowl, whisk the eggs. Add the yoghurt, maple syrup, erythritol, vanilla extract, and melted coconut oil. Mix well.
- In another large mixing bowl, whisk together the almond flour, baking powder, cinnamon, and baking soda, ensuring there are no clumps.
- Combine the wet ingredients with the dry ingredients, whisking gently until a batter is formed.
- Pour mixture into baking dish and even out
- Bake for 40 minutes, or until a toothpick inserted into the cake comes out clean. Allow the coffee cake to cool before serving. Enjoy!
