Healthy Coffee Cake

Coffee cake

Ingredients

  • 3 large eggs
  • ¼ cup plain Greek yoghurt
  • ¼ cup pure maple syrup or sugar free to lower the calories
  • ¼ cup monk fruit or erythritol
  • ¼ cup melted coconut oil
  • 1 ½ tsp vanilla extract
  • 2 ¼ cups almond flour
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground coffee mixed with 3 tablespoons water

Instructions

  • Preheat the oven to 180 Celsius and grease a square baking tin.  Line it with parchment paper.
  • In a large mixing bowl, whisk the eggs. Add the yoghurt, maple syrup, erythritol, vanilla extract, and melted coconut oil. Mix well.
  • In another large mixing bowl, whisk together the almond flour, baking powder, cinnamon, and baking soda, ensuring there are no clumps.
  • Combine the wet ingredients with the dry ingredients, whisking gently until a batter is formed.
  • Pour mixture into baking dish and even out
  • Bake for 40 minutes, or until a toothpick inserted into the cake comes out clean. Allow the coffee cake to cool before serving. Enjoy!
