TURKEY BEETROOT BURGERS

A great quick on-the-go low calorie, high protein snack 

Serves: 5

Ingredients

500g turkey mince

1 large beetroot, grated

1 tbsp psyllium husk

1/2 brown onion, finely diced

2 tbsp mint leaves, finely diced

Small handful of shallots

Himalayan sea salt

Method

Mix the turkey mince, grated beetroot, onion, shallots, mint and psyllium husk together with your hands until well combined. Divide into five even portions and shape into patties. Cook on a low-medium heat in a non-stick pan for 5-8 minutes until cooked through.
