Apple & Cinnamon Protein Muffins
These healthy muffins are baked with almond meal, keeping them soft and moist

Ingredients
1 apple
1/2 cup raw stevia or erythritol
1 tsp vanilla extract
1/2 cup almond milk
3/4 cup almond meal
30g Orbit Nutrition Vanilla Protein Powder
2 tsp cinnamon
1 tsp nutmeg
2 tsp baking powder
Method
- Preheat oven to 180ºC fan-forced and spray muffin tin with coconut oil or line them with muffin baking paper
- Peel and dice the apple and put aside
- In a mixing bowl, add almond milk and vanilla
- Fold in dry ingredients to your wet mixture
- Fold in the diced apples
- Divide batter equally among your prepared muffin tin
- Bake for about 15 minutes or until tops are puffed and golden brown
