Creamy Coconut Protein Balls
These non bake tasty Coconut Cream Balls are the perfect quick and easy snack or dessert.
Ingredients
2 cups unsweetened desiccated coconut plus more for coating
2 scoops orbit nutrition vanilla protein powder
1 cup organic oat flour or (puffed rice cereal for gluten free option)
4 tablespoons coconut oil melted
4 tablespoons sugar free maple syrup
4 tablespoons coconut cream
1 tablespoon lemon zest
1 teaspoon pure vanilla extract
Instructions
- Add all the ingredients to a large mixing bowl and mix until fully combined.
- Form one heaping tablespoon of the mixture into a small round ball. Place it on a large plate and roll the balls in desiccated coconut .
- Repeat with the remaining dough.
Note:
~ The mixture is delicate, so be gentle when forming the balls. Press the dough into ball shapes rather than rolling.
~ If the dough is too crumbly, add a bit more coconut cream or maple syrup.
~ Place the coconut bliss balls in the fridge to firm up.
~ To make this recipe gluten-free, be sure to choose gluten free rice puff cereal instead of oat flour.
