Fuel your body with a delicious and balanced treat with these banana and blueberry slices!
Ingredients
2 bananas
1 egg
¼ cup olive oil
¼ cup Greek yoghurt
¼ cup unsweetened almond milk
1 ½ cups oat flour
1 tbl spn Lemon zest
1/3 cup Stevia or Erythritol
½ tsp baking soda
Pinch of salt
¾ cup frozen blueberries
Optional toppings:
Frozen blueberries
Rolled oats
A sprinkle of stevia or erythritol
Method
1. Preheat your oven to 180°C.
2. In a large bowl, mash bananas and combine the egg, olive oil, greek yoghurt and almond milk.
3. Add the oat flour, stevia, protein, baking soda and salt, and mix well until combined. Gently fold in the frozen blueberries.
4. Transfer the batter to a lined loaf tin. Top with a few extra blueberries, rolled oats and a sprinkle of stevia. Place in the oven and bake for 32-35 minutes or until a skewer out comes clean.
5. Remove the loaf from the tin and place on a wire rack to cool.
6. Cut into slices and serve with a spoonful of greek yoghurt for a well balanced snack.
