Lesson #3: EGG WHITE OMELETTE

EGG WHITE OMELETTE

INGREDIENTS

  • 240g egg whites
  • Handful of spinach (tear into pieces)
  • 400g raw chopped sweet potato
  • Salsa to taste
  • Dash of cinnamon
  • 2 stevia packets

DIRECTIONS

Place sweet potato in microwavable bowl,
and poke holes in slices with fork, proceed
to spray with cooking spray and place in
microwave under ‘potato’ setting (count =
1 potato). Bring skillet, greased with
cooking spray, to medium heat and sautee
spinach sprayed with pam as well. Once
spinach is cooked – add the egg whites on
top. Flip about halfway through and
continue to heat until cooked through.
Remove from heat and top with salsa. Top
your sweet potatoes with cinnamon & 2
stevia packets.
