Ingredients (12 cupcakes): –
- 125 g coconut flour
- 3 eggs
- 4 egg whites
- 250 g Chobani Greek yoghurt – Sweetener (Raw stevia)
- 200gm blue berries
Directions:
- Mix the eggs, coconut flour, yoghurt, blueberries and 2 table spoons of sweetener – Put the mixture in cupcake tins to about 3⁄4 full.
- Bake the mixture in the oven for 20 minutes at 180°C
- Let cool down
- Optional: You can also heat up the berries in a pan and add the liquid onto cupcakes for the topping
- More sweetener can be added if you’re a real sweet tooth
