HIGH PROTEIN BLUEBERRY CUPCAKES

High protein cupcakes.

Ingredients (12 cupcakes): –

  • 125 g coconut flour
  • 3 eggs
  • 4 egg whites
  • 250 g Chobani Greek yoghurt – Sweetener (Raw stevia)
  • 200gm blue berries

Directions:

  • Mix the eggs, coconut flour, yoghurt, blueberries and 2 table spoons of sweetener – Put the mixture in cupcake tins to about 3⁄4 full.
  • Bake the mixture in the oven for 20 minutes at 180°C
  • Let cool down
  • Optional: You can also heat up the berries in a pan and add the liquid onto cupcakes for the topping
  • More sweetener can be added if you’re a real sweet tooth
  • Let cool down and Enjoy!
