Lesson #11: SEARED WHITEFISH WITH COUSCOUS

Seared Whitefish with Couscous Cucumber Salad

INGREDIENTS
170g white fish
• 100gcouscous, cooked 
• 2 tbsp minced garlic
• 1 cup chopped cucumber 
• 1⁄2 cup diced red onion • 2 tbsp
fresh lemon juice • 2 tbsp fresh
chopped mint
leaves
• Cooking Spray (Rice Bran)
 
DIRECTIONS
Add salt and pepper to both sides of white
fish and set aside. Heat skillet on medium
heat, then spray with cooking spray, add
fish, garlic and onions. Reheat couscous
in microwave – then stir in mint, lemon
and lastly cucumber. Serve fish on the
side with fresh squeezed lemon.
