NO CARB SPINACH FRITTERS

 
INGREDIENTS
  • 500g Baby Spinach (about 10 cups packed)
  • 1/2 Onion – finely chopped
  • 1/4 Cup Parsley – chopped
  • 1 Garlic Clove – minced
  • 3 Large Fresh Free Range Eggs
  • Salt & Pepper
  • 1 tsp Cumin
  • 1 Tbsp Spn Grated Parmesan Cheese
  • 2 Tbsp Coconut or Macadamia Oil – for frying
 

METHOD

Cook off spinach, cool and squeeze out excess water. Coarsely chop.
Mix spinach, onion, parsley and garlic together in large bowl.
In small bowl whisk eggs, cumin, salt and pepper.
Add egg mix to spinach along with parmesan and mix well.
Heat pan on med-high and add oil.
Using a 1/4 measuring cup, scoop out mixture and place in to hot pan, using a spatula to press down. Don’t over crowd pan.
Turn down to med-low, cook for 3-4 mins each side until crispy and brown. Place on a plate and cover with foil to keep warm while cooking the rest of the mix.
