– 500gm lean grass fed Beef
– 1 grated zucchini
– 1 grated carrot
– 5 vine-ripened tomatoes
– 2-3 garlic cloves
– 1-2 chilis
– Sea salt Cracked pepper
– 50gm Basil
Combine mince, zucchini, carrot, chili, sea salt and cracked pepper.
Mix up well and make into 20 rissoles.
In the blender put in tomatoes, basil and garlic and blend well.
Put meatballs into a hot non-stick pan and cook each side for a couple minutes each till they are cooked.
Add the sauce and let simmer for 15 minutes
Enjoy with some nice steamed vegetables or mixed salad with a drizzle of Olive oil for a great lunch or dinner.
