GRILLED GREEK CHICKEN

Grilled Greek Chicken
 
Ingredients
 500gm Skinless Chicken Breasts
 small handful Kalamata Olives (30gm)
 4 Whole Tomatoes, Diced
 sprinkle some Low fat Feta Cheese, Crumbled (30gm
 
Marinade
 1/4 Cup Macadamia Oil
 3 Cloves Garlic, Chopped
 1 Tablespoon Chopped Fresh Rosemary
 1 Tablespoon Chopped Fresh Thyme
 1 Tablespoon Chopped Fresh Oregano
 2 Lemons, Juiced
 
Directions
In a bowl, mix the olive oil, garlic, rosemary, thyme, oregano and lemon juice. 
Cut up chicken pieces into strips. Place the chicken pieces, olives and diced tomato in the mixture, cover and marinate in the refrigerator 8 hours or overnight. 
Preheat oven to 180 degrees.
 Place marinade chicken in a baking tray, add a drizzle of marinade to keep moist and cook for approximately 30 minutes. 
Sprinkle a little feta on top once cooked. 
 
Note: Do not pour all the marinade onto the chicken as this will bump the calories right up in your meals. Just let the chicken marinade overnight in the marinade.
